40 bags in 40 days....

I quit taking pictures & doing daily updates, but I'm still purging a ton of stuff. I've dropped off at least 20 walmart bags of clothes as donations. Several clutter spots around the house (and in the cars) cleaned out. And things no longer needed (papers mostly) have been trashed.

This has been a good project, and I could probably easily carry on with a bag a day past Easter & thru to the end of the year!!

Crackpots, Baking Cheeseburgers, and life's trials

Crackpots. The loving term of endearment my friend Casey has labeled that thing that sits on your counter & can produce a whole meal in 8 hours (or 3-4 on high).

Rotisserie Chicken in the Crackpot. It's pinned on my pinterest if you know me, and if not go search pinterest & I'm betting you'll find it. I did snap a picture of it cooking away.....Oh, and mine doesn't look like the pinterest one because of course I messed with the ingredients & stuff......It was good tho!






Baking Cheeseburgers. Casseroles. One Dish wonders.....The munchkins love this & they are picky eaters, we usually serve it with sweet potato fries (they're sweet potatoes so they're healthy, right?!)

Instructions & pics....I'm feeling accomplished right now.

Brown hamburger (1 1/2 - 2 lbs). Drain.


Add some ketchup (1/2 cupish), Mustard (1-2 Tbs), Black Pepper (1/8 tsp) and water (it called for 1/2 cup, I won't do so much next time because the end result was a tad runny)


Move burger mixture to casserole dish (I used 9x13 glass pan). Top with shredded American about 2 cups.

Roll out crescent roll dough onto top of everything & Bake @ 350ish til dough is golden brown.





Try not to trip over the big dog that believes he must lay at your feet the entire time you are in the kitchen.


He's lucky he's a good doggie.



Now onto life. Monster has an appt in Indy this week with the dermatologist again. I hate the drive to Indy. Its long. And I'll get to do it with both boys. Alone with both boys.
CJ starts physical therapy this week. I knew it was coming, but I was trying to ignore it. I'm running out of energy keeping up with the things Mason needs, I don't know how I'm going to throw in daily exercises with the little man too. The hubs won't be around much because of a new project at work & I have all the kids Thurs - Sun. All 5 kids. All alone.

I am currently accepting donations in the form of full wine bottles. Much appreciated! You're even welcome to help me drink them :)

Awwww I raised good kids!

People often positively comment about my children's behavior and I'm not going to lie I love knowing they get that from the parenting they have. :)

This is my 6 year old.

My 6 year old is holding two cars. He got them (along with a few other toys) for having the most AR points in his class.

He walked in the house, excitedly telling me that he was top of class and then walked on into his room to put away his things. He came back out to living room & handed his 1 year old brother a car from the movie Cars (M's favorite movie!). Then he brought another car still in packaging to me to open.

As I opened it, he tells me he picked out cars for his brother because he knows his brother doesn't get to go play outside on the trampoline as much as they do & he thought his brother would like to play with them while the big kids are outside.

Completely melted my heart.

I would have a picture of M playing with the cars but he's hit the terrible two's a tad bit early & is already in bed for the night!

Weekend Wrapup

I suck. I don't have any pictures at all from the last few days. But I still plan to share what we were part of!

Yummy Food....we made chili mac, salisbury steaks & mashed tators, and potato soup!

Family Fun......karate, shooting bows, walking in the woods & donkey basketball (more on that in a minute)

My 6 yr old son attended his first birthday party without me. I don't know if I'm ready for them to grow up! But it's good for him to have some friends outside of his siblings and he had a blast!!!

Donkey basketball was a blast. I have not laughed so hard ever. Seriously, should you ever get the chance to see this, you gotta go! The kids each got to ride the donkey's between games too, so they were all hyped up (like they don't already have free reign on horses whenever they want. lol)

Gearing up for a week of good weather now & some fun outdoors! I'm so glad spring is this close now!

If martini's were served in the ER....

"If martini's were served in the ER parents would be much more pleasant about having sick kids."

Yep. /that's wat I told the cop last night when he walked up to my window and wanted to clarify that I hadn't been drinking.

I may have swerved a time or two trying to give my sick child a drink while driving during a wind advisory (or maybe the advisory had already expired but there were still some serious gusts happening!) I may had known a cop had been following me since I got on the highway in E, and I may have been annoyed that he didn't pull me over til ACHS. I may have been even more annoyed to realize I know this cop. LOL But I hadn't been drinking & how the hell was I supposed to know my license plate light was out?!

Monster is sick. Real sick. High fever took us to the ER and he tested positive for RSV /////////////////////////// & Influenza.

At the ER we were stuck waiting because an old guy with a splinter in his finger walked in right beforre us. first come first serve basis is ridiculous. M should have been triaged as more severe and taken first. I will be filing a complaint and next time I will just call the ambulance to take him so he gets taken care of without a miserable 45 minute wait infecting the others around that icky place.

After we got the lab results & discussed with the doctor wether or not we were admitting him to the hospital right then, (decided to let him come home but if anything gets worse we go right back for admission) got to Walgreens to pick up a script. The phramacist was hesitant on the dosage, called ER to verify, they verified, he kept it at what they wrote but he seemed really concerned with it.  He gave me the info he had, and where he got it from, he gave me the source the ER was using too, he told me its ultimately my decision but suggested I call our primary first thing in the AM to check with her. Great....add a tad bit of stress to the night.

Leave there, head home, Call my mom who was home with Babe to hear that he's been throwing up since I left. Yum. Get pulled over & be a smartass. Cop sends you on your way with nothing but the words of wisdom to get your light fixed. Home, Monster fights his meds. He is really really sick. Temp is back up. He never fights meds, he's usually begging for meds!

Babe is just ecstatic to see me. Has fussed & not slept for my mom, was all smiles & coos for me & went right to sleep the moment she walked out the door. (It's not just her, he is extremely in love with his momma. I refuse to let this last past toddler years!)

As I was typing this (specifically the part about walgreens) my phone started ringing. Weird...it's not even 7am. I managed to get to it & it was the ER doctor calling to say his dosage was wrong. Its all ok, I went with the pharmacists recommendations anyhow and was going to call our primary this morning to check into it. He sounded like he genuinely felt awful about it & apologized many times. Mistakes happen. Doctors aren't pros in medicine, pharmacists are ;-)

Monster's not up yet & I'm really just dreading him getting up with another fever. I'm home alone. The husband is working a couple of hours away & I haven't heard from him yet today. It's gonna be a wine kinda night tonight. (Although since I mentioned martini's last night all I can think of is how good an apple martini would taste!)

The search for capers....

Capers.
I see this listed as recipe ingredients sometimes & usually just ignore it because I sure as hell don't know what they are.
I've never seen such a thing in my grocery store that has 5 shelving rows. They don't carry no fancy stuff.

But alas, I found a recipe I really wanted to try. A recipe with very few ingredients, and of course one of those few ingredients was Capers. I contemplated leaving them out. But figuring that there were only 4 things on the list, I thought they may actually play a part in the taste of this dish.

So I sit at work, I ask if the other girl has ever bought Capers. No she hasn't, but she has eaten them (one step farther than I have been!!) and liked them (score!!). We discuss that they are a plant seed (I found that on wikipedia thank you very much) and try figuring out what grocery store would carry them & where they are in the store.

I go to a certain store, I happen to be looking for something else in the condiments aisle. Lo & behold, there it is beaming down on me, a jar of Capers. They were next to the olives.

Ok, on to the yummy stuff.

Chicken Piccata

1) 2 -3 Boneless skinless chicken breasts cut to bitesize pieces, dusted in flour (which I mixed salt & pepper in first) and pan fried

Add to skillet

2) 4 cups chicken stock

3) 1/2 cup lemon juice

4) 1-2 Tbs Capers!!!

Simmer over med-high heat for about 20 minutes. Sauce will thicken from the flour on the chicken. For a bit sharper taste add 1/2 C butter when done simmering. Serve with Mashed tators. Real mashed tators. Not the instant stuff (come on now, boiling tators & mixing them really isn't anymore time consuming than the fake stuff!!)

40 bags -- Day umm hmmm

Ok, so I lost track of days, but I'm still trashing & giving away!

Clothes still be gone thru (who knew we had so many clothes here!!), papers getting sorted/filed/tossed.

The goal the next 2 weeks, my boxes in the garage & the hubby's clothes (boy has more clothes than any girl I know!!)

It's been a little crazy here, so hopefully I can get to some fun updates & pictures soon.....maybe even tonight, depending on how dinner turns out ;-)
